4) I'm in the process of doing the same thing. I'll be teaching a course for college seniors on sustainability and Innovation starting in the fall. I'd love to compare notes, and I'm happy to share anything I've got. The books I'm thinking about using so far are:

I like the "Ten Faces ..." book because it focuses on different roles students can play in innovation. I'd love to find an additional book on innovation but haven't found any I'm crazy about, so I'll probably use lots of different chapters. I may also add another book on sustainability if I can find one that feels like it fits.
In my other teaching, I've found some good chapters in a book called "The Gecko's Foot". I have a fair number of experiential exercises like a Life Cycle Analysis exercise that have worked well. I've also got some good materials to use from my BOP business class. For example, there's a recent article called "Design for the other 90%" that's quite good.
